Leek & Sage risotto – beautifully simple

Here’s this week’s recipe of the week. It is really delicious, although i’m worried that the picture makes it look a bit like rice pudding! But it’s simple and easy to make, can be on the table in 25 mins, and it’s really comforting.

Here’s the ingredients

1 tbsp olive oil
2 leeks , sliced into pound coin sized round (up to the light green bit)
1 x teaspoon dried sage (if you have fresh even better, but it tastes fine with dried)
190g risotto rice (arborio is best)
1 litre hot vegetable stock
1 tablespoon mascapone
2-3 rashers streaky bacon (if wanted)
2 tablespoon grated Parmesan ( if required)

Here’s what to do…

1 heat the oil in a large pan and add the leeks, sweat them for about 2-3 mins, without browing. Add the sage, the arborio rice and the stock – ideally add the stock a ladle at a time, stirring all the time until absorbed.

2 It should take about 15 mins to add the arborio and all of the stock. Keep stirring, test the rice at this point if it tastes “grainy” still add another 50 ml of stock, or a touch more if needed. (In the¬†meantime¬†cook the bacon under the grill)

3 Take off the heat and stir in the mascarpone and stir in the parmesan if required. Serve with the bacon on top.
