Summer Spaghetti – Recipe of the week

If you want to make a quick, light lunch for a few, then this recipe is perfect. It’s light but tangy, with the lemon giving it just the right amount of sharpness which contrasts with the silky pasta. This is really easy to make and you’ll probably have most of the ingredients already in your fridge and store cupboard!


1  x pack spaghetti (I use dried, but you can use fresh)

100g lean smoked bacon or ham

low fat cooking spray (like fry light)

juice of 1 lemon

2 egg yolks

3 tbsp half fat creme fraiche

good handful fresh basil, torn up into small pieces


1 Cook the spaghetti in a large pan of boiling water according to the instructions

2 Meanwhile fry the bacon or ham until crispy in a little of the low fat cooking spray.

3 Mix together the lemon juice, the egg yolks and the creme fraiche in a separate bowl

4 Drain the pasta, reserving a little of the water for if needed later

5 Mix the pasta, the bacon and the creme fraiche mixture together with tongs, if needed add a little of the reserved water to make it smooth and glossy.

6 Add the basil leaves and serve immediately.
